Preferences are under Edit > Preferences...
The View menu is not used to set preferences.
Sorry it that was confusing. I already have the preferences set for Single Page/Continuous- Fit Width. I was just describing what I have to go through every time I start Adobe Reader in order to change to the way I want it to display.
Each document can be set up to use your preferences, or can set its
own overriding view. Sounds as if you are stuck with documents that
override your wishes.
Seems strange that EVERY PDF that I open has been configured to over-ride user settings. I'm thinking that it's more likely that my preferences aren't being utilized when I open a document. In Preferences, however, the setting remains as I wish it to be, Single Page, Continuous so I guess it's possible that it's being over-ridden but it just seems odd. I've never had any occasion to set an over-ride on PDF documents that I have created and don't know many other authors who do, either.

Just wanted to echo the author's thoughts on this, though I'm using Acrobat Reader 8.1.2. I'm experiencing the same behavior. Under Edit>Preferences>General>Page Display my settings are Single Page Continuous and Fit Width, though I must go to View>Page Display and set it to Single Page Continuous from Single Page for every PDF I open. I don't remember when this behavior started, it might have been with the upgrade to 8 from 7, but I know that this wasn't always the case. I also know that all of my PDFs are not locked into overriding my Page Display preferences, because, as I said, it wasn't always this way.
In Edit>Preferences>Page Display on Adobe Professional 8.1.2 there is a option, where you can set the Default Layout and Zoom. I've set Page Layout to Single Page Continuous.
But under Preferences there is also Accessibility, with the option Override Page Display. I've marked it to Always Use Page Display Style and chosen Single Page Continuous.
I thought that would solve the matter but it didn't. Default and Override set to continous, PDFs still opening with Single Page (not Continuous).
I am using Adobe Reader 7.0 and I have the same issue. I could never change/save any preferences (under Edit->Preferences) permanently.
Everytime the Reader initalises, it seems to override my settings to its default ones.
By the way, I have tried to change prefernces directly from the registry. It does not work. I'm using Windows Vista.

I have this same problem. Even though I click edit, preferences, page display, and set page layout to "single page continuous", documents always come up in "single page" display mode. I know the documents are not created to do this because they are created in house. Has anyone discovered a fix for this yet? It is very annoying.
I have the problem as well. It really is VERY annoying. Perhaps it should be logged as a bug?
I have the same problem on Adobe Reader 7.0.9. I open the Reader (no document loaded) Edit> Preferences> Page Display> set Default Zoom=100% and click OK. If I view Preferences again (without closing) it's still 100%. Close Adobe Reader, re-open and Default Zoom is back to "Automatic". Very annoying!
Tested several other preferences and some of them save and some don't, e.g. in Preferences >Full Screen I tick "Advance every 5 seconds" and tick "Show Navigation Bar". Save, close Adobe, re-open and "Advance every 5 seconds" is not ticked while "Show Navigation Bar" is!
This is independent of any document settings as I never opened a single doc in the whole process.
Will Adobe acknowledge there is a problem here? Do they bother to read the forums? Looks like this problem has not been fixed in version 8. Very poor!
I have checked the registry keys.. no vain there. Reader overwrites the registy, too.
In Acrobat 8 you need to go to Preferences | Accessibility and either set "Always use Page Layout Style" to "Single Page Continuous", or untick it to make your page display preference work.
To set it permanently, the "default layout and zoom" checkbox does not seem to work.
Instead, I got it to work by checking the checkbox for "Restore last view settings when opening documents".
These checkboxes are under the "Documents" Category in Edit->Preferences.
