Does your Symbol Face have a bold font instance? Word may be faking it
and Reader is not fooled.

With Word I see perfectly the difference between my symbol "bold" or not !.
I noticed that Adobe reader doesn't show (in bold) also the cyrillic characters, while with word I can see them.
I think that Reader (on my pc) doesn't have the right font (.otf) to show the bold greek characters..

If the font were embedded properly in the PDF then Reader should see it but, like Mike says, Word could be using what's called a faux font. In other words, it's allowing you to bold a font on a character when there really is no bold font in that family.
Just because you can choose "bold" in some applications, doesn't mean it really exists and that can cause issues when going to PDF.
Additionally, since Acrobat Distiller is not being used to create the
pdf, it could be that the application is not creating the pdf correctly.
If you can post a small file for us to look at we may be able to tell
where the problem lies.
What Graffiti said... Iv'e run into this problem quite a bit. That's why I moved over to using open office. Haven't had any issues since! Knock on wood!
Problem resolved !
At the end it wasn't a Reader problem, but a font (Arial Bold) missed in a directory of my Oracle Application Server (which called Reader in order to show reports in pdf format).
