CS3 added table and cell styles which has carried over to CS4.
Keep in mind that if you have the suite you only have until the end of April for intro pricing on the upgrade and you can't upgrade individual suite components.

I'm not sure what kind of publishing you do, but variables let me do dictionary style running heads. Big improvement for complex books, catalogs.

New InDesign features such as Tabbed Windows, smart cursors, smart guides, conditional text, live preflight, creating interactive documents, rotating spreads, join enhancements to other suite titles as great productivity enhancements. Most of these improvements are not the kind you need to find a use for - they are of immediate value in routine daily work flows. Other brand new features introduce new mainstream capabilities.
You can find a number of demo's on Adobe's site for some of the new features. I think there are still some up for CS3 as well.

Illustrator's multiple artboards of vayring sizes, new alignment features, etc just plain make life easier. -

- the ability to place InDesign files INSIDE indesign files (quite useful)
- a smarter preflight system which saves you time in preflight
- text variables (which have a ton of different uses)
- GREP searches — which if you learn will literally save your life
- GREP STYLES — see above
- Object styles — Did CS2 have these?
Gosh, there's more. But these are a few of my favorite things.
