Did you ever figure out the solution to your issue?
There are some fonts that cannot be embedded in a document. This is because the font maker has chosen to make it this way (usually due to a licensing restriction). If this is the case then the Adobe LiveCycle software will respect that restriction and will not embed the font.
Having said that however, I was pretty sure that Arial was able to be embedded. Perhaps its your particular flavour of Arial that is not able to be embedded?
Did you get this working? if so what did you do? Can you please let us know as we are also running into the same issue.
Haven't solved it yet. We're still favoring including an unprotected version of the document with the protected one that can be saved on its own.
If you get a solution working, we'd love to hear what it was.

We got this working by adding the below fonts to the server-fonts directory on the jvm which you specify in the LCM when you configure the livecycle and bounced the jvm and thing to note down here is that we added our Windows system fonts which are "ttf" files and our jvm is on linux. You can give a shot and see if this works at your end also.
