You can't 'directly' assign a shortcut to a particular swatch, that I know of....
... however, if there is a particular color(s) you commonly use and would like to assign to a shortcut, here is is workaround:
- Set Stroke/Fill to desired Swatch Color
- Open Window > History, select the step, then click the Save As Command icon
- Give the new command a user friendly name. Once created it will be located at the bottom of the Commands menu list.
- Then assign a shortcut to that command. Go Edit > Keyboard Shortcuts: Web Standards > Menu Commands > Commands > [Your Command] and assign a shortcut to your command.
