I have the option of moving from a single Nvida graphics card 9600GT to a SLI combination dual card GTS 240 with 1 Gb memory in each card.
I understand this configuration is more appropriate for gaming, it would seem that the additional card performance would contribute to the performance of the editing platform. I used Premier CS4 exclusively.
I am fortunate enough to also be in a position to acquire a GTX 280 single card capable of SLI but I will only be able to use the single card. It too as 1Gb of memory but tremendous graphical power over the GTS 240 but again, since these cards are primarily aimed at the high end gaming appllications, would the performance increase not provide a benefit to me in Premier Pro and when transcoding?

Absolute waste of money. You will not notice any performance improvement.
The only thing that may help during encoding is when you ONLY encode to H.264 AND get a $ 1700 nVidia CX card. Price/perfomance wise your best option is either to keep your 9600 or get an ATI HD4890 card. The performance gain will be small, so the first option, keeping the 9600, seems the best.
Transcoding/encoding is highly CPU/speed dependent, that is really the only thing that matters.
