I am evaluating whether Captivate is suitable to produce a series of software demos for a client (large company). Problem is: The to-be-recorded software will be updated regularly, so re-recording possibility is desirable. Before I will ask the client's software administration to install MS IE 6.0 to make the re-recording functionality available, I would like to be sure that a re-recorded software demo includes not only the "naked" movie but also all the didactical elements that have been included after the initial recording, such as text boxes, arrows etc. Any ideas?

Re-recording will only have the standard Text Captions etc added. You can export the Captions and import them afterwards. But for other objects like highlights, added during editing, I cannot think of any workaround. Personally I try to insert slides with instructions in between the captured slides, try to have really suitable automatically added Text Captions (by editing those default captions before recording). I re-record only the captured slides.
Perhaps someone else can give you better hints. If you have a good scenario, the re-recording and adapting process works rather well. But editing will be necessary. It is like recording a new video, with the advantage that the slide-oriented capturing of CP allows editing more easily than FMR (which is only used when necessary by CP).
