Basically, you need to have the shape of the object and make it 100% spot colour set to overprint in the layout. Call the Spot Colour "EMBOSSING" and call the varnish spot colour "VARNISH".
You can talk with your printer if you want it embossed (popping out of the page) or debossed (sinking into the page). They can best direct you.
For the Christmas Balls, make a new layer called Embossing. Apply the Spot Colour you made at 100% fill.
Draw a little circle around each ball, with a sliver of a white stroke. Tell your printer what way you want to emboss the balls, as in individually.

Put the embossing elements in a separate layer. When finished, you will need 2 documents: one with just the ink print, one with the embossing elements in 100% black and as vectors -- no bitmaps or gray scale allowed. [*]
If I remember correctly, for each 'level' of embossing a separate plate has to be made -- I don't think it can be done in one single go.
[*] Or, as Eugene correctly states, as a separate spot color.

Eugene Tyson Sep 24, 2009 7:53 AM (in response to [Jongware])Yep as long as it's a 100% fill. The spot colour will show up on the RIP as separate plates, and they can turn off the EMBOSS and VARNISH colours you have set up and not output them.

P Spier Sep 24, 2009 8:09 AM (in response to Talyianna)Actually, this may need to be a hand-cut die in order to get the embossing to be as dimensional as you want it. Most shops that do embossing still employ a die cutter, so by all means ask about it.
