The only attribute a control point can have in a gradient mesh is colour. So, it you use a global colour swatch, then changes to the swatch will propagate in the gradient mesh.
Here, I’m using only global swatches, indicated by the grey square at right.
Editing the “Blue” swatch changed the colour, even without selecting the point.

and the problem you will have with that is that if you want only the color to change at a specific point or points you would have to select them.
So you are back to square one.
BTW if you want to change the colors and you want to do it in a global even if you do not have global colors the you select the gradient mesh object or shape if you wish and then go to Edit>Edit Colors>Recolor Art.
