I shoot in RAW+jpeg and have my camera set at a 'picture style' where it adds a small amount of contrast to my images.
I think if I open up the RAW file in Canon's proprietary RAW converter it will read that contrast information and apply it.
Will ACR recognize the embedded Canon information. If so, is it possible to remove that embedded contrast boost or am I screwed?

Adobe doesn't know about Canon-specific settings so ACR-rendering will not be affected by what Picture Style you have set in camera.
