For the roll change the duration till you get what you want. Why export to QuiRckTime? It is a waste of time. DVD needs MPEG2-DVD, not QuiRckTime. Either use MPEG2-DVD, which requires expertise in the encode settings, or use Dynamic Link to Encore. This last option looks better for you.

I've set the title speed that I want, but the movement of the names is choppy.
As for Quicktime, I have no choice. It's a project I need to submit in QT format.
For smooth playback, hit the Enter key to Render. If you only want to do this for a small area, say your Title, you can limit the Render (and the Render time), by using the WAB (Work Area Bar) to just that area of the Timeline. Now, does it playback better?
Good luck, and do take Harm's advice on your Export for DVD-Video. Do not bring anything but MPEG-2, Dynamic Link, or DV-AVI Type II into the mix. You WILL regret having done so.
One other consideration on your Title Roll. Instead of using the Roll Preset, you can set it be a Static Title, and then using Keyframes, animate it to do anything that you want, by using the fixed Effect Motion>Position. The Keyframes can also be controlled by Velocity, so that motion is extremely fluid, and it can even pause, if necessary. Keyframes are easy to apply, but before I go into the instructions, test the Render, and see if that works for you.
