Starting from having a 4:3 video clip in premiere, what is the best way to encode it for my iphone / ipod touch?
Quality is top priority.
Not looking for a tutorial; just need a few sentences describing the settings.
E.g. should I de-interlace? what video format to encode to?
I have premiere pro cs4 on winXP.
AME already has encoding presets under the H.264 drop downs.

Yes, just select H.264 and then probably the iPod Video Large preset.

I had some trouble with the iPhone presets in Premiere. Here's an alternate solution if that doesn't work for you.
Export your project as a NTSC DV Quicktime file (I suspect PAL DV would work as well if that's the format one is working with)
Open iTunes
Add this Quicktime file to your Movies library in iTunes
Right click on the icon for your Quicktime file in iTunes, and choose "Create iPod or iPhone version"
iTunes will convert the file for you, and save it to whatever subdirectory that is set in your preferences.
There does not seem to be any settings tweaks prior to the conversion.
