ok, so, I'm stupid... please help

For the record as I went to install flashon my new computer, I realized I'm still using version 3. Can you say major upgrade... Anyway, a lot has changed. Everything people are doing with flash today, I wanted to be doing 8 years ago.
Well I can't relearn everything at once. I'm trying to throw together a small web site for my own reeducation. So why not add a video chat room on to catch up on flash... Right? Well this is where I get stupid. Can someone please explain to me in plain english how the simultaneous user thing works. Ihave been out there shopping around for fms hosting and was looking at ready made video chatroom as well. I thought I understood it all untill I was over at userplane reading their information. Ok, I understand, they are out to make money. But, their information is as follows.
I can get a free video chat room that has banner ads. It comes with a 9 simultaneous user licence and 9 gigs of transfer a month. Of course I pay for any bandwidth overage. They claim this is fine for 0-100 visitors a day. Their next step up has no banner ads, 10 simultaneous user licence, 15 gigs of monthly transfer, and it costs $130 a month. They claim this is fine for a site that has 0-5000 visitors a day.

This refers to the estimated daily visitors to your site. This is included as a way for you to forecast the number of connections you will need. On average we have seen that for every 1000 daily visitors a site will use one simultaneous connection.

Ok, forget the video chatroom. What if I write a poker game that 5 players can play at once... I think you now see why I feel stupid. Again can someone explain to me in plain english how this works and what I should be looking for in a fms host. Or is it cheeper to buy your own copy of the server in the long run?
