    background/masking?

I'm trying to completely remove the background from a picture and end up without any background. In the Joyce Evans Masking tutorial she takes a black horse and uses masking to change the background to green. Is there a way to take the horse out of the picture and end up with an image shaped like the original horse keeping the horse black and not having all that extra canvas left over. My problem is I would like to take a picture, cut out the part I need and place that in a table over a background image without having the extra canvas.

All exported images are rectangular. There's no getting around that.
Making the background transparent creates the illusion that the images
          isn't rectangular, however.
