    PMS Color Halftone Proofs

I've got a customer requesting a single PMS color print with a halftone watermark type image in the background. I've never done halftone prints for a customer before but have done many for myself so I'm pretty familiar with what works on a screen and what doesn't. Typically we do our proof artwork in spot colors then insert them in a PDF proof template and then convert the spot colors to black for film. However this isn't working for the halftone dots. I've tried everything I can think of to change the color of the dots and it just isn't working.. To clarify a little bit what I'm doing is creating the image in a 50% gray and then going to effect> pixellate > color halftone. What is it that I'm overlooking?

I've tried following this guide http://vectips.com/tutorials/creating-halftone-effects/  and it seems pretty swell until I get to the part where I need to live trace the dots and for some reason all of the live trace options are greyed out?
