The default font in CS3 appears to be Myriad regular 12 pt. Can I change this document/program wide?

Yes what you d is create a blank document

then open the character style panel and change the normal style to some font other than Myriad 2 pt

then save this document (I suggest calling by the font name) you save it to the New Document Profiles folder

The folder on the Mac is located at Users/Username/Library/Application Support/Adobe/Adobe Illustrator CS3/en_US/New Document Profiles

Now when you create a new file instead of selecting the print dialog select from the start up screen the font name you gave the document or from the new document dialog from the pull down menu under Profiles.

When you start typing the default will be the font you changed the normal character style.

This knowledgebase document covers the topic for both Windows and Mac operating systems and Illustrator versions 12 through 14.
