Probably the simplest sample app showing the loading of plugins is the ControlBarPluginSample:
This sample shows how to load a plugin that ends up being used as the control bar for the player.
The AkamaiPluginSample is probably the most full-featured plugin sample, as it shows how you can load a wide variety of plugins:

It would be nice to see some consistency and simplification of the examples. OSMF is a thick library with many unique concepts and the sample projects kinda drove me crazy on my first pass. For example one sample shows how to set up the Player/Factory/Element classes individually then later on you find this great class OSMFConfiguration, then you find MediaPlayerSprite. It's like WTF. So this plus class renaming, signature changes and lots of blogs on previous versions make OSMF very painful to start. I'll document what I can but I hope you can improve the samples.
I think what's being requested is documentation supporting these examples. The code examples are very helpful, but there needs to be an explanation of how the plug-in architecture works before diving straight into code.
