You can increase the spacing between Artboards. Or, you can contain the text in a Clipping Mask. Or you can convert the text to paths and trim the paths (which is what I would do in that design).
Thanks! How would I go about trimming the paths? I have converted the text but cannot find a way to trim it.
You draw a rectangle over the part you wish to delete.
With the rectangle select but not the art below or any other paths you go to Object path divide objects below
then with the direct select tool select the portions you wish to trim and hit delete. Repeat for each part you wish to delete
The other way is to draw all the rectangles that are required t trim the object.
select them all and go to Object>Compound Path>Make
Select both the compound path you just made and the outlined letter.
then go to the Pathfinder Panel and chose the second icon on the top row (Minus Front) and click it.
The parts you don't want will disappear. You will get the same result as above.
