I have words in my file, then I created outlines, then I created strokes in appearance.
Now I want to change the strokes and colors in appearance. I am going back to every letter separately to do this! If I try to select the complete word the different strokes do not show up in appearance. I'm sure there is a quicker way to do this??
Yes but by using the Live Color feature.
select the text only then go to Edit>Edit Colors>Recolor Art you now can change the colors that way only problem might be if two letters are the same color and you want to save them to two different colors.
As far as having access too all the objects at the same time in the appearance panel ,no!

I haven't figured out how to use this yet.
Also, if there are objects that are black and you only want some changed, I'm thinking it can't be done this way.
If you want to make all the paths of same fill and stroke then you can select all and choose clear apearance from the appearance panel flyout menu and then add a new fill \ stroke with the desired settings.
