You will need to open your FXP file in Flash Builder to add the necessary code to assemble the user's form data and transmit it to the server. If you do a quick search for emailing forms from Flash Builder, you should be able to find a solution.

Enabling functionality like sending the data to server is beyond the initial scope of Flash Catalyst, you might find better solutions in either the Flash Builder forums or within the Adobe Cookbooks.
