The only book I know about for scripting Photoshop is old( Photoshop 7 ).
Here are some links that might be interesting to you:

I've just bought Adobe Scripting: Your Visual Blueprint to Scripting in Photoshop and Illustrator don't know who it's by or the publisher, it should turn up sometime this week, will let you know if it's worth the £7 I paid on Amazon.
I've already read through the documentation and found it clear, useful and certainly essential reading but there's nothing like a really good educational book to get you up to speed fast.
A Wiley 'bible' would be nice, or maybe a Dummies book, I'm seeing them tomorrow so I'll badger them for one
This is the book I was talking about. It is old( 2002 ) and for Photoshop 7. I have not read it myself so maybe it will be worth what you paid for it even if it will have out of date info.
Wouldn't recommend the book myself only this stuff's thin on the ground. It doesn't mention ScriptUI at all, which I guess I should've known
Spoke to Wiley people, they'll look in to it, no promises.
IIRC, there was no ScriptUI in PS7. There may be another book floating around but it there is, I suspect it just regurgitates the Adobe docs.
