The two platform versions are very close. About the only difference will be fewer Transitions and Effects in the Mac. This ARTICLE is a CS4 list of differences, and CS5 omitted some more for the PC, so I would assume that they would also be missing in the Mac version.

"Creating an uncompressed sequence" is only documented for Windows only...but I'm told there is no reason why an uncompressed QT sequence can't be constructed on Mac by specifying the appropriate QT preview codec, checking maximum color depth, etc....
Todd? Anybody there with a mac who could try this? I'm currently teaching a class where the specifics of the "not available on Mac" stuff would be good to know definitively...

That may very well be the case. I was only in charge of the Premiere Pro documentation for a few weeks (part of June and part of July), and that wasn't enough time to get it into the "I will stake my reputation on it being complete and correct" state that I took years to get the After Effects documentation into.
If you see a gap or error, please leave a comment on the relevant page(s) of the document so that the people who are now in charge will see them. These comments are the most direct line of communication that you have with the documentation team.
Now that I'm in Technical Support, I'll do what I can to advocate for more comprehensive documentation in Help and such.

AVI is a Microsoft unique format, can you encode in the Mac version to AVI?
