I work for JVC and would like to try and help.
Once you have your video ready to upload, you might want to try just going to the You Tube site and uploading it from their web page, instead of uploading it through your editing software.
My experience is that there are no settings to make, and this always uploads the video with the highest possible quality.
The challenge, Chris, isn't the Everio, which produces fine video. The challenge is that it produces them as MOD files, which nearly every major video editor (including Premiere Elements) has trouble working with.
Perhaps you can recommend a convertor or some video editing app that works with these MOD files natively?
I have Adobe Premiere Elements 8 and it works fine with the .mod files from my Everio. I also use Pinnacle Studio 14 with no problem. Windows Movie Maker works fine if you have Vista Home Premium or Windows 7 Home Premium (with Windows Live Movie Maker).
While there are a few editors that do not work with .mod files from JVC and other SD cams, there really are a lot of good choices that do.
Please try one of my recommendations. I think you will be very happy.
