Depending on exactly where you want the Button to go, one could create a dupe Menu, but with a different "thumbnail" or with an AV file, that appears to be a "thumbnail," if that is what you are shooting for.

What I ended up doing was deleting the text portion of the video button and then adding in a separate text button underneath. Viewing the menu without anything selected looks identical. The video button links to the chapter shown in the video thumbnail, the text button links to the appropriate chapter menu. Not exactly what I had originally looked to do, but not a bad compromise. I still get the video thumbnail and still can go to the chapter menu if I want.
