Sorry - I am unclear...What do you deliver as and why?
I deliver tutorial videos on various topics / subjects / software.
I use Screenflow and iShowu to capture the screen recordings.
When doing a screen capture, I use Apple Animation as it seems to be the best looking for recordings such as mine, in addition to Apple Animation being a requirement.
The company to which I deliver this product(s) requires that I utilize the parameters which I mentioned in the previous post:
Size: 1024 x 768
Codec: Apple Animation

Edit: I should mention that, in addition to the export settings, I am unsure of what Preset Settings I should use - as there is nothing fitting the specs I need, etc.

My GUESS is that the codec you are using is not support in the trial... but I could of course be wrong

I'd be surprised if the Apple Animation Codec didn't work in the trial. Whereas MPEG support is provided by Adobe, and can't be in the trial due to licensing issues, the Animation Codec is something you install separately, like the Lagarith codec. So long as you have it installed on your rig, it seems like it should work, even in the trial
Having said that, as there are no video standards that use 1024 x 768 dimensions, you won't be able to use a preset. Instead you'll have to create a custom sequence designed for your media.
yeah ... I got it working now.
To be honest - I'm not even sure what I did.
I just made sure that I selected Square Pixels, Apple Animation, and 1024 x 768 wherever I had to opportunity.
