Haven't tried wallaby yet but I am working with html5 video now.
My workflow has been to convert the video using Handbrake to the correct resolution and other specs.
Once I have that done I use Miro Video Conerter to get it into the HTML5 video formats.

Is there any alternate way to create it? Client needs the interactivity and if I ll convert it into any video format which is supportive to i-pad or i-phone, then the interactivity will not come. And it will play automatically.
Nobody has expertise in HTML 5?

For interactivity on the ipad you're going to have to doo this in all HTML5 probably using canvas and other css3 tricks such as transitions. Without seeing what you want to convert its almost impossible to give good advice.
However, HTML5 video is just video, no interactivity.
