2, Yes, by reapplying that master to the page, but that will put everything back there as it was before including the object you overrode. An oft quoted rule of thumb is if you need to override it why is it on the master page in the first place? You can of course create a series of master pages based on each other to get around this.

2. Let's say I want to have a running folio at the top of all the pages, same size & color, but it needs to have different text depending on what section of the document. Such as chapter 1, chapter 2, etc... This would be wise to use on master pages for formatting and placement, but need to be overridden so that I can change the text from page to page, no?

2, What you need to do is have seperate master pages for each Chapter. It's not as silly as it sounds, it takes very little work to copy a master page and change the text, then apply that to a range of pages, or apply a range fo pages to that master page. What you should also do is put any common graphics colours etc on a "Master master page" that the chapter pages are based on so you can change that at one hit, the only thing different about the chapter master pages is that text, which of course you apply a paragraph style to so you can change that all at once too.

First, the manual override on the document page is accomplished by using Cmd + SHIFT + click.
In answer to question 1, you must select an object on the master page to either allow (the default) or prevent local override.
In answer to question 2, if there are overridden items on the page, you will have two choices, depending on whether an overridden object is selcted or not. If objects are selected, there will be a command to remove local overrides from selected object(s), if not the command will change to remove all local overrides.
Keep in mind, also, that master objects are behind anything added to the same layer on the document page. This can make it a bit more complicated to select and override some objects.

Still, I don't understand why "Allow Master Item Overrides on Selection" is grayed out in the pages panel menu.
Any ideas?

CME101 Jan 8, 2013 12:30 PM (in response to rigoliarts)OK, I know this is an old one, but I just had the same problem and was searching for a solution, found it on my own.
In my case, I have items associated with layers. I could not select any objects in locked layers.
Hope this solves your mystery.
