You may be very experienced in other applications, but AE tends to be a different kind of beast. Knowledge from other applications rarely transfers into effective AE use. So even the experienced veteran benefits from beginning at the beginning:
Your knowledge of other applications should speed along the learning process.
And if you don't HAVE a lot of knowledge of other applications, here's some friendly advice: as an AE newbie, you're trying to jump into the deep end of the pool, but you're wearing lead weights. Go learn the basics and take those weights off.

What's the best way to set a lot of text. Say 20 layers. And be able to change the font without having to go into each layer and change the typeface by hand? Is there a sensible way to set this up?

You can select all 20 layers then simply change the font in the Character Palette.
