Drawing a simple rectangle and using Effect > Stylize > Round Corners offers a bit more control.
You might look into plug ins, like HotDoor's CadTools or Astute Graphics VectorScribe to even more control.

Steve Fairbairn May 24, 2011 10:45 AM (in response to Michael Brown12)Did you double-click on the rounded rectangle tool? That gives you the dialogue box for controlling the corner radius.
Any rounded rectangle you draw after that will have the same corner radius unless you go to the dialogue box again to change the radius.

In CS3, click on the rounded-rectangle too and then click on your page and it will display that dialog box.
