What version are you running?
There are bug fixes in version 5.0.3:
"Dissolves were not behaving correctly when processed by CUDA when opacity keyframes were present. This is fixed."
I have that version. The latest. So this is something else.
So... you are running CS5.0.3 on Win 7.
There is a similar problem in CS5.5

To keep working, I would use a white color matte
with a standard dissolve and forge ahead.

Hmmm... Okay. I have no idea what that means (white color matte) but i will search for it. I'm a beginner, in case you guys (and gals) had not noticed.
The reason it goes to black is because black is what shows when nothing else is there. That's the standard behavior with all NLEs. So when you have nothing after the clip, you see black. When you have just the title after the clip, you see the words, and around that, you see black.
If you want white under the title, you're only option is to put it there manually, as in the color matte.
