Making a new layer with a solid color in photoshop

OK- so what I want to do is, I suspect, so easy that I cant find directions on how to do. I'm almost embarrased to ask, but here I go:

I've got several object shot against a white background.

I'm creating masks so that the objects can be lifted out of the white backgrounds and put into a layout.

It has been suggested to me that one way to test the integrity of your masks is to create a layer as a working background, some really loud color such as pink or neon green, so that you can easily see if any of your white (or pink/green) is peeking through you mask

Problem is I cant figure out how to create this working background.

Can someone help? I know its a basic easy question, but I can't figure it out.

      Thanks!
