Sounds good, apart from the SSD, the other disks, the cooling and the PSU.
1. Get rid of the SSD, use a Samsung F4 320 GB instead. Saves you tons of money and makes no difference in performance.
2. Get at least 4 identical disks for two on-board raid0 arrays if you have a good backup policy.
3. Lose the liquid cooling and get a CoolerMaster 212 or Noctua or Prolimatech cooler. Easier to install, no difference in cooling capabilities.
4. Increase the power to 850+ W and get a Gold label PSU.
If you want more performance, get a dedicated raid controller and downgrade the 580 to a 570..

What side hard drives would you recommend having as I capture weddings in HDV & DV.
I am in PAL land, England would this make a difference in size of HD's needed?
Being in the UK makes no difference in storage requirements, only in price.
Good disks to look at would be the Hitachi 7K3000 line, fast, 64 MB cache SATA3, reliable and priceworthy.
How much storage you would need depends on your workflow, but try to keep your fill rate below 60%.
