DRM is never added automatically to an EPUB file. Usually, it will be applied when an EPUB is uploaded to a server, like on an online bookstore, when requested. For example, if you were uploading an EPUB to the iBookstore (for the IOS applications like iPad or iPhone), you can either choose to have DRM applied or not.
I am creating e-pubs from material I have written and I do not want DRM on these books. I thought InDesign CS 5.5 automatically puts this on. If so, can I take choose to remove it when I create the EPUB?
No this is not the case.
DRM is applied using another Adobe program.
There are different kinds of DRM. Apple's is called FairPlay and it's used, when requested for iBookstore.
