H.264 - of course, but with what settings?

I'm looking for an "ideal" output format for my AVCHD files, made on a Canon HF110 camcorder.

I always use 1920 x 1280 25p. If I remember correctly the Mbps rate is 17 on the original AVCHD. But how should the H.264 output file look like to preserve an optimum of the image quality of the original file? I'm not looking for a completely lossless rendering, but it should not be noticably compressed either. Is there some kind of variable bitrate setting that can be used? Anything else I should think of?

      Many thanks in advance!
