To change the fill colors of the pie itself, expand its appearence then ungroup. Once that is done you can no longer using the spreadsheet to edit the values.

Direct select works perfectly well on graphs.
Bear in mind though that grouping within graphs is sometimes complex, so if you have legends and stuff you may need to option-click to select whole groups within the graph.
But a simple chart like this should present no problems.

Won't happen automatically. Setting the option for Legends In Wedges will cause the text objects to appear in the wedges, and you can directSelect them (white pointer) to move them to where you want them. But they will snap back to inside the wedges if you update the data. Also, they will display only text values from your first-row of data, not numerical values. You can't make the pie graph auto-display text objects containing both the values and the titles as in your example.
