The Photoshop document you are working is in RGB color Mode and the Illustrator document you are working on is CMYK.
One is light the other is ink pigments.
Here are screen shots of the same gradient fill in Illustrator one is RGB and the other converted to CMYK.
No matter what you make happen ofn the screen in reality the colors when printed on paer are going to much duller on paper but as human beings we tend to compensate for that until you do a side by side comparison so all the beautiful coloryou see in printed material of a CMYK nature is mostly in the mind's eye.

then in the apprearance panel add a new fill
make that say a black to black gradient with one end 100% opcaity and the other end 0% Opacity
You get this you essentially are making a rich black as a gradient overlay that would probably give you what you are seeking.
Do the same with gradients that will not contain black
If it is for the web then just use RGB

Any work around or solution for a bigger color picker?
