Using InDesign CS5.
I have a 142 page catalog, the bulk of which needs to be diced up into 2-page PDFs. Ideally, I'd like to be able to just say "extract pages: 9 & 10 save, 11 & 12 save, 19 & 20 save, etc.", and press "Go". Basically something similar to actions and batch processing in Photoshop. Is there anything like this in InDesign? Is there another way to do this?

I dont think it would be possible to do in Indesign automatically , may be a script can help, why dont you give a try on indesign scripting forums,
It is much easier to create a PDF of the entire catalog. Then open up in Acrobat and extract 2 pages at a time. In Acrobat X Pro, choose Tools > Pages > Extract Pages. You can also do this in Acrobat 9 Pro.
