To my opinion you won't benefit from a template because that has fixed info and you want to have different values.
And whether you like it or not, IPTC s a world standard and it might not be a good idea to change this because other applications or users depend also on this format.
If you want the date format you wish you can choose to do so in a batch rename setting, for instance for a series of images use the format yy-mm-dd_Filename_sequencenumber.
If you use yyyymmdd_filename_sequencenumber your files have a natural sort order in the finder

Menu Tools/ Batch rename or shortcut ShiftCmdR
It is only active when having a file selected but of course meant to have more selected and then in one go rename the selected bunch
Be sure to check the options for extra fields and the options in the pop up menus from the fields. You can also save custom settings.

clicked rename, but in metadata it stayed 2011-06-30.
I suspect i have to select something in "date time" and "date created" menus, just to the left?

You can't change the creation date in an easy way, it seems that it is able using a script but You should drop tat question in the dedicated Adobe Scripting forum.
Batch renaming is altering the filename. Using a yyyymmdd format automatically gives you the correct sort order in a folder and also adding the correct date in the description area would make it easy findable when searching.
Do you have a specific need for changing the date created in the IPTC field?

select DDMMYYYY, click on "rename" and nothing changes in the date order, how do you use it if you want to actually change the date order?
If you read my previous post, it says: the option of date format is interesting, but I can't apply it. In other words, it doesn't work.
Just try it: select a picture in B, give it a date format different from 2011-06-19 which is the (for me at least) default format, click on rename, and NOTHING changes, that's why I was wondering what else I had to click on.
2. As far as changing the date created, yes, I need that: If I have pictures taken in Libya in june 2011, during a fight in Misrata, and
all the world knows that Misrata had the Arab spring in 2011 and they show may 2012, which is the day that I fixed them or
who knows why, that is ridiculous, right?
So I have to change the date back. Can somebody tell me how that happened, or I will make a post for that.
Pease keep the 2 issues separate.
