You can't set line spacing for regular text fields, but you can for text fields with rich formatting.
However, I don't quite follow why you would need it. If the user choose to
fill in the form digitally, why the need for double spacing?

Below is link to a PDF that demonstrates setting the background of a multiline text field to be opaque when it has the focus and when it is not empty. This way, the lines are obscured when it is filled in with Reader/Acrobat but are shown on the printed page (if empty) so a user is able to print it and fill it in by hand, which is where the lines are useful. You'll have to study it a bit to see how it works, but it's fairly simple.
George, that worked great, but I still wish Adobe would allow us to double space text fields. Thanks!
